Peach Pie to Die For

This past summer we spent some time at my in-laws’ house. Whenever we go there, my mother-in-law serves us a lot of amazing food. This past summer was no exception. I’m not a big dessert person but one thing I can’t say no to is her pie. I’m pretty sure I was extremely full but had a second helping because I wasn’t sure when I would have another piece. It’s just THAT good.

About a week after returning home, I wanted a piece of pie. We picked up some peaches at a local market and I made in the pie in no time. To be honest, I cut corners by buying a pie crust. I didn’t feel bad about it because it still tasted amazing.

 

Ingredients

  • dough for a 9-inch pie
  • 5-7 peaches
  • 1 cup whipping cream
  • 2/3 cup sugar
  • 4 tbsp flour
  • Dash of salt
  • 1/2 tsp cinnamon

Directions

  1.  Roll our the pie dough and place it in a 9″ pie pan.
  2. Fill the pie dough with a single layer of peeled and halved peaches, facing up.
  3. Make the custard by stirring the rest of the ingredients together.
  4. Pour the mixture over the peaches.
  5. Bake the pie at 400 degrees for 35-45 minutes, until the pie is set.Tip: Cover the edges of the pie with tin foil so the crust doesn’t burn. Note: The prep time does not include making a pie crust.
